This luxurious phirni is slow-cooked to a velvety consistency and enriched with saffron, which imparts a natural golden tone and an unmistakable fragrance. Balanced with pistachios, it becomes a refined dessert worthy of festive or premium dining.
Ingredients
½ cup soaked & ground rice
1 litre full-fat milk
2 tbsp Saffron Merchant saffron strands
½ cup sugar
2 tbsp chopped pistachios
1 tsp cardamom powder
Preparation

Saffron Activation
Soak saffron in warm milk to unlock its colour and aroma.

Base Cooking
Heat milk and slowly add ground rice, stirring continuously to avoid lumps.

Slow Reduction
Cook on low heat until thick and creamy.

Infusion
Add saffron milk, sugar, and cardamom. Stir gently.
Finish
Chill and garnish with pistachios. The result is a dessert with depth, smoothness, and a luxurious saffron finish.
