Preparation

Infuse the saffron
Soak saffron strands in warm milk for 10–15 minutes until it releases a deep golden hue and aroma.

Reduce the milk
In a heavy-bottom pan, bring milk to a boil. Lower the flame and simmer, stirring continuously. Reduce to about 60% volume—this gives kulfi its signature richness.

Add cream & sweetness
Stir in fresh cream, condensed milk, and sugar. Mix thoroughly until smooth and slightly thickened.

Incorporate saffron & nuts
Add the soaked saffron milk, sliced almonds, and cardamom powder. Let it simmer for another 5–7 minutes for full flavour infusion.

Cool completely
Remove from heat and allow the mixture to cool to room temperature. This step is crucial to avoid ice crystals.
Freezing Process
- Pour into moulds
Transfer the mixture into kulfi moulds or small cups. - Seal & freeze
Cover with foil or lids and freeze for 6–8 hours (or overnight) until fully set. - Unmould perfectly
Dip moulds briefly in warm water to release kulfi easily.
Serving Suggestion
Serve chilled, garnished with:
- Slivered pistachios
- Crushed almonds
- A few visible saffron strands
For a premium touch, plate on a matte black or brass tray to enhance the golden tones.
